Weingut Hirsch is a fifth-generation family estate in Kammern, Kamptal, founded in 1878 and operating from a historic 500-year-old farmstead. The 31-hectare property is dedicated exclusively to Grüner Veltliner and Riesling, cultivated biodynamically since 2006 (certified organic from 2010) with natural compost from local goats and buffalo. Winemaker Johannes Hirsch, named Falstaff Winemaker of the Year in 2011, focuses on terroir-driven wines from top sites like Heiligenstein, Lamm, and Gaisberg. The estate emphasizes gentle, traditional methods—hand-harvesting, spontaneous fermentation, extended lees contact—and bottles all wines under screwcap. A member of respekt-BIODYN and Österreichischen Traditionsweingüter, Hirsch produces wines marked by vitality, minerality, and aging potential, reflecting a deep connection to the Kamptal soils and climate.
