Founded in 1981 by Justin Baldwin, who remains principal owner, JUSTIN is based in Paso Robles, California, where limestone- and sandstone-rich soils, varied elevations, and strong day-night temperature swings shape its Bordeaux-style wines. The estate combines traditional methods such as hand-harvesting and small-barrel French oak aging with newer tools including its proprietary Air Knife process. Winemaker Scott Shirley leads the cellar, with support from consultant Chris Johnson. Sustainability is a visible part of the estate, with a farmstead and edible garden supplying most of the restaurant’s produce, plus irrigation from captured rainfall and runoff. The property also includes tasting experiences, an inn, and The Restaurant at JUSTIN, recognized with Michelin Star and Michelin Green Star honors.
