Pazo de San Mauro is a historic family-owned estate in the Condado do Tea area of Rías Baixas, founded in 1591 and part of the Marqués de Vargas portfolio since 2003. Working with granite and sandy soils and mature Albariño vines, the estate focuses exclusively on 100% Albariño. Under winemaker Susana Pérez, fruit is hand-harvested plot by plot with careful selection, then vinified through three parallel methods including cold maceration and whole-cluster pressing, with limited lees work. While no formal sustainability certifications are noted, the estate emphasizes manual harvesting and vegan-friendly viticulture.
