Salvajes de Gredos is a boutique partnership between vineyard owner Miquel Santiago Carrillo and winemaker Marc Isart in Madrid’s Sierra de Gredos. They focus on high-altitude, old-vine Garnacha grown on decomposed granite, alongside a small amount of Albillo. Farming follows organic and biodynamic principles, including horse-drawn ploughing, retained wild grasses and parasol shading, although no formal certification is noted. Wines are made with natural yeasts, direct pressing and 10 months’ ageing in used old barrels, reflecting a low-volume, single-plot approach.
