San Simone is a fourth-generation Brisotto family winery founded in 1915 in Rondover, near Porcia in Friuli-Venezia Giulia, between the Friuli Grave and Prosecco DOC areas. The family manages the process from vineyard to bottle, producing Friuli DOC wines, Prosecco and innovative wines from PIWI-resistant varieties. Its sustainable “Progetto Verde” combines low yields, dense planting, cover crops, green manure, organic fertilization, mechanical vineyard work and low-impact pest management, with efforts to promote biodiversity and renewable energy. Winemaking emphasizes patience, precision and territorial expression: the wines are described as fresh, fine and varietally clear rather than muscular, while sparkling wines balance traditional and modern methods. The estate is also pursuing organic conversion and presents its wines as vegan, without third-party certification noted.
