Viotti Vini is a family-owned winery in Castel Rocchero, in Piedmont’s Monferrato, run by Bianca Viotti and her father Guido. The family has pursued vine growing and winemaking for seven generations, with the winery established in 1969. Its approach emphasizes careful vineyard work, respect for nature and people, and certified organic production alongside integrated pest management. The vineyards are farmed without herbicides, synthetic chemicals or pesticides, using natural manure and only strictly necessary treatments. In the cellar, native yeasts and spontaneous malolactic fermentation are used; wines are neither filtered nor clarified, marc is not pressed, and sulphites are kept to a minimum. Fermentation takes place in steel, with some wines receiving barrel ageing. The resulting wines are presented as simple, genuine and natural expressions of the family’s tradition.
