Domaine des Créats is a Burgundy estate run by François Lequin of Domaine Lequin-Colin in Santenay and Matthieu Ponson of Cornas, who took over the former Domaine Pascal & Sylvie Pauget. Its hilly vineyards are planted mainly to Chardonnay in clay-limestone soils, including the En Bout site, where eroded topsoil exposes limestone. Farming is in conversion to organic practices, with low yields and organic soil management. The wines are made by Lequin and Ponson using native-yeast fermentations and carry a vegan label, with no sulfites added at pressing.
