Moulin Touchais is a family-owned Loire Valley estate run by the eighth-generation Touchais family. Its vineyards lie in the Coteaux du Layon on clay-limestone soils and are sustainably managed, without stated organic or biodynamic certification. The estate produces sweet Chenin Blanc, with grapes hand-harvested in three to five passes, predominantly using passerillage. Fermentation takes place with wild yeast in concrete tanks, without oak, followed by winter cold-stabilisation and extended cellar ageing; the wines are aged for a minimum of ten years before release. Around 95% of production is exported.
