Domaine Jean Dauvissat

France

Domaine Jean Dauvissat is a family-owned Chablis estate in Burgundy, now led by Fabien Dauvissat, with Jean Dauvissat still involved and earlier generations including Sébastien also active in the domaine. The estate is spread across many parcels in several Chablis communes, with holdings in Petit Chablis, Chablis and Chablis Premier Cru sites. Farming has been organic since 2009, with no herbicides or insecticides, and biodynamic methods have been introduced across part of the vineyards; Demeter certification is in progress. The domaine emphasizes parcel expression through manual harvesting, natural fermentations, minimal sulfur use, and extended ageing in tank, wood and sandstone vessels.
