Waterkloof

South Africa

Waterkloof is an estate in the Western Cape owned by Paul Boutinot, who purchased the property in 2004. On Schapenberg Mountain, the farm combines vineyard land with conservation of native fynbos, reflecting a clear commitment to the wider landscape. Farming follows biodynamic principles, including organic soil fertility, composting, livestock integration and astrological planting, though no formal certification is mentioned. Winemaking takes place in a gravity-fed winery completed in 2009. Overall, Waterkloof stands out for its biodynamic approach, environmental stewardship and modern, carefully designed cellar.
