Paitin

Italy

Paitin is a long-established family estate in Neive, in the Barbaresco area of Piedmont, owned and run by the Pasquero-Elia family since 1796. Deeply tied to Serraboella and Sorì Paitin, the winery is known for a traditional, terroir-focused approach centered on Nebbiolo, alongside Barbera, Dolcetto, Freisa and Arneis from sites in Langhe and Roero. Farming is organic, with certification noted from 2015 and again as fully certified in 2019, and includes biodynamic practices, manual harvesting, no herbicides, and the use of copper and sulfur only. In the cellar, Paitin favors gentle handling, long macerations, submerged-cap fermentation in steel, and aging in large neutral Slavonian and Austrian oak casks, with bottle rest before release.
