Domaine du Cellier aux Moines

France

Cellier aux Moines is a family-owned Burgundy estate in Givry, owned since 2004 by Philippe and Catherine Pascal and their three children. Rooted in a Cistercian site dating back to the 12th century, the domaine centers on the historic Premier Cru Clos du Cellier aux Moines and has expanded with select parcels in Mercurey, Montagny and the Côte de Beaune. Since 2015, vineyards and winemaking have been led by Guillaume Marko. The estate farms organically and biodynamically, stopped herbicides and pesticides before gaining organic certification in 2020 and Biodyvin certification in 2023. In the cellar, a gravity-flow winery, hand harvesting, careful sorting and native-yeast fermentations reflect a precise, low-intervention approach.
