Domaine de Pallus

France

Domaine de Pallus is a family-owned estate in Cravant-les-Côteaux, Chinon, with roots dating to 1883 and now managed by fifth-generation proprietor and winemaker Bertrand Sourdais. Its 12 hectares are farmed organically since 2009 and biodynamically, across varied limestone, clay and sandy soils. The domaine focuses on Cabernet Franc, including parcel-specific wines from old vines such as La Rougerie and La Croix Boissée. Hand harvesting, low yields, indigenous-yeast fermentations and extended maceration express the character of the terroir, while élevage takes place in concrete and wooden vats and Burgundy or Bordeaux barrels.
