Domaine de Cassiopée

France

Domaine de Cassiopée is a privately owned estate in Burgundy’s Maranges area, founded in 2020 by husband-and-wife team Hugo Mathurin and Talloulah Dubourg. The founders run both vineyard and cellar work themselves. The domaine farms vineyards on limestone and granitic soils, is certified organic, and is continuing its move toward biodynamic viticulture. In the cellar, the approach is low-intervention, with whole-cluster fermentation, very little or no sulfur, and élevage in classic French oak, neutral barriques, and terracotta. The focus is on letting terroir speak clearly through fresh, expressive, drink-ready wines, with parcels vinified separately and manual harvesting noted in the source material.
