Jade and Jasper Fiano

Unico Zelo is a small-batch, family-run winery founded in 2012 by husband-and-wife team Brendan and Laura Carter, who also serve as winemakers. Based in a converted 1920s cold-storage in Gumeracha, Adelaide Hills, the producer focuses on drought-resistant varieties like Fiano, requiring only about 25% of typical water use. Sustainability is central: the winery is B Corp certified (since 2019), runs largely on solar power, and follows environmentally friendly viticultural practices. The Carters own their vineyard property (purchased in 2016) and added 50 acres in Forest Range in 2022, but exact production volumes are not disclosed, with wines offered on an allocation basis.
