Producer

Clément Lavallée

France

Clément Lavallée is an independent, family-run Burgundy vigneron whose eponymous label was launched in 2019. Clément and his sister Caroline own and make the wines from their family estate, cultivating vineyards in Chablis, Côtes d’Auxerre, Saint-Bris and Courgis. Their viticulture follows organic principles, with no herbicides, insecticides or synthetic inputs, although the estate is not certified. In the cellar, they use indigenous yeasts, minimal sulfur and gravity-fed transfers, reflecting a restrained, natural approach. Production is limited to very small, artisanal quantities.
