San Salvatore

Italy

Founded by Giuseppe Pagano, San Salvatore is a family-owned estate in Campania’s Cilento, with vineyards in Stio, Paestum and Giungano. Its integrated farm combines vines with olive groves, crops and a water-buffalo herd, supporting biodiversity and the wider ecosystem. Certified organic and biodynamic, the estate follows Steiner-inspired practices including biodynamic preparations and green manure, while using solar power, a biodigester and limited copper and sulfur to reduce its environmental impact. The mountain vineyards, some at 500–600 metres, are influenced by clay soils and sea breezes. Winemaking, led by Pagano with Riccardo Cotarella, focuses on native Campanian varieties, combining traditional inspiration with modern technology and artisanal methods to express the character of the Cilento.
