Les Équilibristes

France

Les Équilibristes is a French wine collective founded in 2015 by restaurateur François de Montval and winemaker Florent Girou, based on collaboration rather than a single estate. Working with organically certified and biodynamically farmed vineyards, the group sources hand-harvested grapes from growers who retain their own estates while following shared standards. Winemaking, led by Girou, follows a low-intervention approach with indigenous yeasts, very limited sulfur, and no fining, filtration, or corrective additives. The focus is on soil health, sustainable farming, and a minimalist cellar philosophy shaped by shared expertise.
