Champagne Chavost is a cooperative producer in Chavot-Courcourt, founded in 1946 by local growers and now bringing together more than 70 multi-generational members. Based in the Côte des Blancs, it is led in the cellar by Fabian Daviaux, who has shaped a distinctive, low-intervention style since 2019. The house focuses on organic viticulture, respect for biodiversity, and encouraging growers to move away from selling fruit to large houses and toward organic farming. Its Champagnes are presented as singular, identity-driven wines, notably made with spontaneous fermentation and without added sulfites, fining, filtration, or added sugar. The range centers on Brut Nature, sulfite-free cuvées, alongside Coteaux Champenois and Ratafia Champenois.
