Producer

Domaine Lejeune

France

Lejeune is a Burgundy producer based in Pommard, making both wines and crémants. The domaine follows a traditional approach supported by modern technology, with semi-carbonic maceration using partial whole clusters and retained stems. Fermentation is carried out with natural yeasts over 5 to 7 days, followed by gentle crushing by hand, foot, or pole. Maceration can continue for 21 to 26 days before the wines are racked into 228L oak barrels, with a portion of new oak. The wines are bottled without fining or filtration. The notes also mention relatively young vines, around 10 to 20 years old.
