Blanc de Blancs

Founded in 1840 in Chablis, Simonnet-Febvre is a historic Burgundy producer that has operated since 2003 as the northern outpost of Maison Louis Latour. Led by winemaker Jean-Philippe Archambaud, the house works across Chablis, Crémant de Bourgogne, Grand Auxerrois and Coteaux de l’Auxois, including wines from the domaine’s original Bas des Chapelots vines. Its range spans classic Chablis styles focused on freshness and minerality, made with traditional methods alongside modern stainless-steel vinification. The producer is also noted for helping revive the Auxois and for working with local varieties including César in Irancy. Simonnet-Febvre is certified organic by Ecocert for the production of organic wines.
