Domaine Fourrey

France

Domaine Fourrey is a fourth-generation, family-run estate in Milly, at the heart of Chablis, managed by Jean-Luc Fourrey since 1992. The domaine produces Petit-Chablis, Chablis, several Premier Crus, Grand Cru Valmur and Bourgogne Pinot Noir. Certified Haute Valeur Environnementale, it focuses on environmentally responsible viticulture, including biodiversity measures, grass cover, mechanical weeding, organic fertilisers, soil-preserving ploughing and reduced treatments. Grapes are harvested manually for Grand Cru and young vines, while other parcels are mechanically harvested with sorting. In the cellar, indigenous yeasts, pneumatic pressing and temperature-controlled stainless-steel tanks are used, with selected cuvées matured in larger barrels or amphorae.
