Domaine de la Chevalerie

France

Domaine de la Chevalerie is a long-established family estate in Restigné, in Bourgueil in the Loire Valley, cultivated by the Caslot family since 1640 and now run within the family by Laurie and Emmanuel Caslot, with Stéphanie Caslot also part of the current generation. The domaine farms Cabernet Franc vines, many 30 to 70 years old, and has been certified organic since 2008 and Demeter biodynamic since 2012. Its viticulture emphasizes respect for living soils and biodiversity through phytotherapy, biodynamic compost, agroforestry and manual harvesting. In the cellar, native yeasts, gentle extraction and minimal sulfiting guide a low-intervention approach, with élevage in larger-format vessels and jars. The wines are noted for finesse, silky tannins and strong aging potential.
