Etienne Fort owns and operates Château St Salvadou, a family estate in Limoux, Languedoc-Roussillon, where older vines are organically farmed on deep limestone-clay soils at 450 metres altitude. Since 2013, the domaine has produced its own Crémant de Limoux and Blanquette de Limoux, using low yields, hand-picking and wild-yeast fermentation in old demi-muids. The wines undergo secondary fermentation in bottle and extended lees ageing, then are disgorged with zero dosage. Inspired by Champagne, Fort’s approach emphasizes freshness and a clear expression of terroir.
