Val de Mer is Patrick Piuze’s second project, launched in collaboration with the Moutard-Diligent family in northern Burgundy near Tonnerre and Chablis. The label works with sustainably farmed vineyards on Kimmeridgian limestone rich in marine fossils. Its wines follow a traditional Chablisienne approach: hand-harvested grapes, restrained intervention, and lees ageing. The rosé is made entirely from Pinot Noir, with brief skin maceration, stainless-steel fermentation, nine months on lees, and disgorgement as Brut Nature with no added sugar. Other Val de Mer wines use hand-harvested Chardonnay.
