Jonathan Didier Pabiot is a fifth-generation, family-owned producer in Pouilly-Fumé, Loire Valley, working vineyards in Les Loges across flint, limestone and Kimmeridgian marl soils. The estate is organically farmed and Demeter-certified biodynamic—the first in Pouilly-Fumé to receive this certification. Grapes are harvested by hand from older vines, with the domaine producing several cuvées, including Elisa and Léon. Jonathan leads both ownership and winemaking, using native-yeast fermentation, six to eight months of lees ageing in stainless steel and concrete, and minimal sulfur. The wines reflect a hands-on, low-intervention approach rooted in the family’s long history in the appellation.
