Domaine Ellevin, operating as Domaine Brigitte Cerveau, is a fourth-generation family estate in Chichée, Burgundy, founded in 1975. The domaine owns 16 hectares of Chardonnay, producing about 65,000 bottles annually from four appellations. Under winemaker Alexandre Ellevin, who took charge in 2003, it practices certified sustainable viticulture, using plowing to limit treatments. Fermentation and aging are primarily in stainless steel, with full malolactic fermentation. The estate emphasizes family ownership and craftsmanship, and its wines have been presented at professional events like Les Grands Jours de Bourgogne.
