AT ROCA is a family-run estate in Sant Sebastià dels Gorgs, Penedès, founded by Agustí Torelló with his father and aunt, and now worked with the next generation. Rooted in calcareous sites on the slopes of the Serralada Litoral, the project focuses on indigenous varieties and close collaboration with local grower families. Viticulture is certified organic and regenerative, following traditional Mediterranean dryland farming, with hand harvesting and attention to living soils. In the cellar, each parcel is handled separately, with spontaneous fermentations from indigenous yeasts and a minimal-intervention approach. The house is especially defined by long lees ageing, Brut Nature sparkling wines, and artisanal methods including manual riddling and hand disgorging.
