WG Josef Fischer is a fifth-generation family estate in Rossatz in the Wachau, on the right bank of the Danube in Niederösterreich. Run by Josef “Joe” Fischer and Katja Fischer, the winery farms its vineyards organically and is transitioning to biodynamic methods, with integrated agriculture, cover crops, beneficial plant sowing and attention to animal protection. The focus is on Grüner Veltliner and Riesling from sites including Kirnberg, Kreuzberg, Frauenweingärten and Mugler, shaped by the cool influence of the Dunkelsteinerwald and the Danube. In the cellar, Fischer follows a low-intervention approach with spontaneous fermentation, no cultured yeasts, maturation in large oak or 500-litre barrels, and unfiltered bottling.
