Château Peyrassol is a historic Provence estate founded in the 13th century by the Knights Templar and owned by Philippe Austruy since 2001. In the foothills of the Massif des Maures, its vineyard sits within a wider landscape of forest, garrigue, oaks and olive trees, with clay-limestone and gravelly Triassic soils. The domaine focuses on AOP Côtes de Provence wines, aiming for terroir-driven, elegant and authentic Provençal expressions across rosé, white and red. Farming is certified organic, with practices including cereal sowing between rows to support soil life, controlled canopy work, and hand harvesting on the oldest plots; some vines are at least 45 years old. A walled Clos parcel is reserved for its namesake cuvée only in outstanding vintages. The estate is also known for its contemporary art collection and strong emphasis on biodiversity.
