Pago de La Jaraba is a family-owned estate in Villarrobledo, La Mancha, acquired by the Fernández Roldán family in 1997. Its organic vineyards, planted on varied alluvial, sandy and quartz-rich soils at around 700–750 metres, are protected under the La Jaraba Vino de Pago designation. Tempranillo, Graciano, Cabernet Sauvignon, Merlot and Sauvignon Blanc are farmed within a biodiverse landscape of pine and holm oak. The estate follows circular practices, using manure from its Manchega sheep and emphasizing water conservation, renewable energy and reuse of by-products. Winemaking is led by Pedro Antonio del Toro, with the winery located beside the vines for rapid processing. Gentle handling, long vatting, concrete settling and French-oak ageing support a minimal-intervention style focused on intense, aromatic wines with mineral and balsamic character. Wine is produced alongside artisanal Manchego cheese and extra virgin olive oil.
