Based in Nuits-Saint-Georges, Maison Louis Bouillot is a historic Burgundy house specializing in Crémant de Bourgogne, produced from Pinot Noir, Chardonnay, Aligoté and Gamay across terroirs from the Châtillonnais to the Côte d’Or, Couchois and Beaujolais. Founded in 1877, it helped develop the appellation before its creation in 1975. Its range includes white, rosé, Blanc de Blancs, Blanc de Noirs, vintage and terroir cuvées, with a focus on the influence of site and grape variety. The house combines its own vineyards with long-term grower partnerships, manual harvesting and an increasingly environmentally conscious approach: vineyards are HVE-certified, with a growing proportion farmed organically, alongside cover crops, agroforestry and biodiversity projects. Its historic La Verrière welcomes visitors for immersive tours and tastings.
