Family-owned Château Gilette is a small Sauternes estate in Preignac, sheltered from wind to encourage mist and noble rot. Julie Gonet, granddaughter of René Médeville, has operated the property since 2004 with Xavier Médeville, who also crafts the wines. Production uses only botrytised grapes, gently pressed and fermented in stainless steel before long reductive aging in concrete vats. There is no oak or chaptalisation, resulting in a pure, low-yield style. The estate is certified Sustainable (HVE3) and Vegan.
