Abbotts & Delaunay is a family-owned producer in Languedoc-Roussillon, led by Laurent Delaunay, a fifth-generation Burgundian winemaker, and Jeanne Delaunay. Working from sites in the cooler Aude Valley and Pyrenean foothills, Laurent brings a Burgundian approach to parcel selection, aiming for freshness and bright fruit character. The estate highlights sustainable viticulture, with attention to biodiversity, living soils, lightweight bottles, and natural pigment inks. In the cellar, oak is used with restraint to build complexity without masking varietal expression, alongside stainless steel aging; some Syrah is also vinified with whole bunches.
