Nikolaihof Wachau

Austria

Nikolaihof Wachau is an independent, family-owned estate in Austria’s Wachau and Kremstal, held by the Saahs family since 1894 and now managed by the fourth generation. Its vineyards lie on steep Danube terraces of primary rock and loess, with Riesling and Grüner Veltliner at the center of the estate’s production. Biodynamic viticulture has been practiced since 1971, with Demeter certification since 1998, as part of a diverse mixed farm including herbs, fruit, beehives and grapeseed-oil production. The winery avoids synthetic inputs and uses natural preparations. Nikolaus Saahs Jr., Katharina Salzgeber and Christine Saahs guide winemaking, favoring natural fermentations in Austrian oak and extended lees aging.
