Weinhof Uibel is a small estate in Ziersdorf, Niederösterreich, where Leo Uibel took over his parents’ winery in 2007. The vineyards have been Demeter-certified biodynamic since 2021 and are worked manually in harmony with nature, including biodynamic preparations, pruning, and grape thinning. Leo Uibel oversees the winemaking, favoring spontaneous fermentation, no additives, extended lees aging, and occasional bâtonnage. Selected white wines receive skin contact, reflecting an artisanal approach focused on expressing the fruit and vineyard with minimal intervention.
