Domaine Sébastien David is a family-run estate in Saint-Nicolas-de-Bourgueil in the Loire Valley, led by Sébastien David, a 15th-generation winemaker who oversees both vineyard and cellar work. The domaine is certified organic and biodynamic by Ecocert, with practices that include zero plowing, weed-folding, co-planting trees, hand harvesting, and limited copper use. Planted mainly to Cabernet Franc, with some Chenin Blanc, the estate follows a minimal-intervention approach: native yeast fermentations, carbonic maceration, and wines bottled unfined, unfiltered, vegan, and without added sulfites.
