Domaine des Hâtes is an independent, family-run estate in Chablis led by owner-winemaker Pierrick Laroche, who has formal enology training. After previously supplying grapes to the La Chablisienne cooperative, the domaine began producing its own wines in 2010 and now makes Petit Chablis, Chablis and Premier Cru. Sustainability is central: herbicides have been abandoned, fungicide use reduced, and vine rows are plowed. A gravity-operated hillside winery limits energy consumption and handling. The estate’s wines reflect a hands-on, independent approach to Chablis, with the best early-vintage bottles sold directly while the remainder is sold in bulk.
