Founded in 1934, Schola Sarmenti is an authentic Puglian winery in the heart of Salento. The estate focuses on native varieties including Fiano, Negroamaro, Primitivo, and Susumaniello. Grapes are hand-harvested, then fermented and aged in wood and steel. Its cellar combines star vaults and ancient walls preserved through architectural recovery, reflecting the winery’s connection to Salento’s heritage.
