France

Paul Doucet & Fils is a family-owned Sancerre estate founded in 1975 by Paul Doucet and his brother, and now run by the Doucet family under Patrice Doucet. Based in Sury-en-Vaux, the domaine farms around 11 hectares of Sauvignon Blanc and Pinot Noir on Caillottes and Terres Blanches soils, with vines averaging 30–35 years. Its Culture Raisonnée approach uses organic fertiliser only when needed, reduced chemical inputs and weather-led decisions. In the cellar, gentle pneumatic pressing, native-yeast fermentation and stainless-steel ageing on fine lees support a restrained, low-intervention style.
