Parató is a family-run producer in El Pla del Penedès, Catalonia, with roots in the Elias family’s 17th-century vineyard tradition. Revived by Josep Elias Andreu in 1975, the winery is now continued by his four children. It farms 94 hectares across four estates under CCPAE-certified organic viticulture, on predominantly calcareous-clay soils with some sandy plots. Parató is an integral producer, working exclusively with grapes from its own vineyards and controlling the process from field to finished wine and cava. Varieties and individual plots are vinified separately, with still and sparkling wines kept distinct. Reds receive oak and bottle aging, while the winery focuses its sparkling production on Reserva and Gran Reserva Cavas, maintaining modern facilities alongside an artisanal character.
