Domaine Nicolas Maillet is a four-generation family estate in Verzé, in Burgundy’s Mâconnais. Nicolas Maillet took over in 1999 and restored estate bottling, working as both proprietor and winemaker. The vineyards, predominantly Chardonnay with plantings of Aligoté, Pinot Noir and Gamay, include old vines on clay-limestone hillsides. Farming is certified organic by Ecocert and biodynamic by Demeter, with particular attention to soil life, manure, cover crops and deep-rooted vines; new plants are grafted from old-vine wood. Harvesting is manual. In the cellar, each plot is vinified separately, using native yeasts and traditional equipment. White wines are fermented and aged in tanks rather than barrels, often over extended periods, to preserve purity and express differences between terroirs.
