Cave de l’Abbé Rous is a wine cooperative based in Banyuls-sur-Mer, at the meeting point of the Pyrenees and Mediterranean. Its steep, manually worked terraces lie on schist soils and are shaped by sun and the Tramontane, with Grenache emblematic of the cru. The cooperative produces AOP Collioure, Banyuls, Banyuls Grand Cru and Côtes du Roussillon wines, including both dry styles and naturally sweet fortified Banyuls made by mutage. Its Banyuls Grand Cru is aged for eight years in oak demi-muids or foudres, developing notable depth and aromatic complexity. The vineyard is farmed using reasoned, environmentally respectful practices, and the cellar’s name honours Abbé François Rous, a late-19th-century pioneer in Banyuls wine commerce.
