Founded in 1997 by Gilles and Joëlle Morat in Vergisson, Domaine Gilles Morat is a family-owned Burgundy estate producing wines from Pouilly-Fuissé and Saint-Véran. The domaine follows certified organic, low-intervention practices, including hand-plowing, manual grass removal, minimal organic fertilizer, no synthetic pesticides or herbicides, strict low-yield pruning, and hand harvesting. Winemaking uses indigenous yeasts and occasional copper-sulfite treatments, with vegan-friendly production. Gilles leads the winemaking, while his son Pierre has contributed to the operation and vinification since joining in 2020. The estate’s intentionally small, artisanal approach emphasizes careful vineyard work and minimal intervention.
