Domaine du Collier is a family-owned estate in the Loire Valley, founded in 1999 by Antoine Foucault and his partner Caroline. Based in Brézé, the domaine works mainly with Chenin Blanc and a small parcel of Cabernet Franc on clay-limestone soils, including old, low-yielding vines. Farming is organic in practice, with no chemical sprays, fertilizers, or weed killers, and all fruit is hand-harvested and sorted. Antoine Foucault oversees the winemaking, using spontaneous fermentations with native yeasts, little or no sulfur until bottling, and élevage in barriques and historic underground cellars. The wines reflect a clear focus on old-vine fruit, careful farming, and low-intervention cellar work.
