Domaine du Colombier

France

Domaine du Colombier is a family-owned Chablis estate based in Fontenay-Près-Chablis, a few kilometres from Chablis. Established in 1887, it has been shaped by the Mothe family, with Guy Mothe focusing on Chablis from 1957 and today Jean-Louis, Thierry, Vincent and Marion Mothe involved in the domaine. The estate works Chardonnay across the four Chablis appellations, including sites in Chichée, Fourchaume, Vaucoupin, Petit Chablis and Bougros. Farming follows lutte raisonnée, with traditional vineyard work and no organic or biodynamic certification noted. In the cellar, the domaine combines traditional Burgundian methods with modern precision, using pneumatic pressing, temperature-controlled stainless-steel fermentation, malolactic fermentation, and élevage in tank or barrel for some wines, with an emphasis on terroir-driven, dry, lively Chablis.
