Pentecostes makes wines from three farms in Galicia’s Miñor Valley, centered on the Pazo Barreiro estate, where vines grow on steep, terraced slopes. The producer is restoring the valley’s sole Rías Baixas vineyard and practices low-intervention, natural viticulture. Grapes are hand-harvested, transported in 15 kg crates and processed in small daily lots. Winemaking takes place in underground facilities, with cold maceration, gentle pressing, gravity clarification, cool fermentation and six months on lees; a small portion is barrel-aged. The wines are labeled vegan and vegetarian. No formal sustainability certifications or ownership details are disclosed.
