Pattes Loup

France

Pattes Loup is a family-run Chablis domaine in Courgis, founded in 2005 by Thomas Pico, who owns, farms and vinifies the estate himself. Drawing on family vineyards and his training in viticulture and oenology, Pico converted the property to organic farming and later gained Ecocert organic and Demeter biodynamic certification. Vineyard work emphasizes low yields, hand harvesting, cover crops and agroforestry with a strong focus on environmental respect. In the cellar, the approach is firmly minimal intervention: native-yeast fermentations, ageing in concrete eggs, barrels and stainless steel, extended élevage, and no fining or filtration.
