Italy

Azienda Salvioni, also known as La Cerbaiola, is a family-run estate in Montalcino, Tuscany, now in its third generation. The La Cerbaiola property lies southeast of Montalcino overlooking the Val d’Orcia, with three small vineyard parcels at altitude and varied soils. Vineyard work is entirely by hand, with hard pruning and selective harvesting to keep yields low. The family follows a traditional, low-intervention approach: fermentation in stainless steel, then long ageing in large Slavonian oak casks, with Brunello maturing for at least 36 months. Brunello di Montalcino is the flagship wine, but in less suitable vintages the harvest is directed to Rosso di Montalcino. The estate’s philosophy views wine as a collective family work.
