Domaine Olivier Hillaire

France

Domaine Olivier Hillaire is a family-run estate in Châteauneuf-du-Pape, founded by Olivier Hillaire in 2006–2007 after acquiring part of the former Domaine des Relanges. The family has been vignerons since the late 19th century, and Olivier works alongside his sons Baptiste and Corentin. The estate farms roughly 9–12 hectares organically across Châteauneuf-du-Pape, Côtes du Rhône, and Vin de France, using practices like horse-manure compost and low yields, though without formal certification. Production is modest, focusing on a small range of about ten wines, including two red and one white Châteauneuf-du-Pape. Winemaking is overseen by Olivier with consultant Philippe Cambie, emphasizing traditional methods like manual harvests and gravity-fed bottling.
